Speaking of Adding More Greens





I'm really not a salad person (AT ALL), but this one is amazing!  This will definitely give "ooohs" and "aaaahs" at the dinner table.  As for quantity, use as much or little as you want depending on how many servings you're going for. De.Lish!
 

Arugula, Kale, & Cilantro Salad

  • Arugula
  • Kale (tear the dark parts of the leaf into small pieces)
  • handful of finely chopped Cilantro
  • Apple chopped into small pieces
  • Avocado chopped into small pieces
  • Cherry tomatoes cut in half
  • Black olives chopped into small pieces
  • Crumbled gorgonzola cheese
  • Small handful of dried cranberries (orange flavored ones at Trader Joe's are great)
  • Spicy Pecans (from Trader Joe's)

Best with a small dab of Yogurt based Blue Cheese dressing.  ENJOY!
