A. MAZING and HEALTHY Chocolate Peanut Butter Fudge!


Don't be fooled by the lack of sugar. This fudge is INCREDIBLE!  De.li.cious!!!

 

I made a double batch for a class I was teaching and had to hide the extras from my husband. 

 

You will notice one of the key ingredients is coconut oil. Though coconut is a saturated fat, it's one of the healthiest fats we can consume!  (I promise....there are tons of books about this that teach you the science behind it).  If you don't enjoy the flavor of coconut, use a good quality butter.

Healthy Chocolate Peanut Butter Fudge

Ingredients:
  • 1/2 cup coconut oil (slightly melted, but not hot) or a good quality butter (NOT margarine)
  • 1/2 cup good quality cocoa powder
  • 1/2 cup natural peanut butter
  • 1/4 cup mild raw honey
  • 1/2 tsp pure vanilla extract
Preparation:
  • Prepare a muffin pan with 10 muffin liners. I like to use the mini liners to make 15-20.
  • You can hand-mix, blend, or combine all the ingredients in a food processor.  Hand mixing makes the least amount of mess.  Mix until everything is smooth and nicely combined.  (It will be very liquid-y.)
  • Pour the liquid fudge into the prepared muffin liners dividing evenly between them.
  • Place the muffin pan in the refrigerator for 30 minutes or until the fudge has hardened.  If you're in a rush, put them in the freezer for about 10 minutes.
  • Remove the muffin liners from the pan and enjoy your delicious, healthy fudge!  Store in the refrigerator.
